Perfectly Tender BBQ Smoked Brisket
A whole packer brisket heavily seasoned with Golden Hive and Daily Blend over a mustard binder, smoked low and slow until probe-tender β the low-and-slow centerpiece that feeds a crowd.

The long game. A whole brisket gets a mustard binder and a heavy double coat β Daily Blend laying down the salt-pepper-garlic backbone, Golden Hive building a honey-BBQ bark that goes almost black over 12 hours of smoke. There's no shortcut and no substitute: this is the cook that earns the crowd. Serves 12 with leftovers you'll guard.
Ingredients
- 1 whole packer brisket (12 to 14 lb), point and flat
- 1/4 cup yellow mustard (binder)
- 1/4 cup SpiceX Daily Blend seasoning (SPG)
- 1/4 cup SpiceX Golden Hive seasoning
- Butcher paper, for the wrap
Directions
- Trim: trim the fat cap to about 1/4 inch and square off any thin, flappy edges β they'll only burn. Cold brisket trims easier.
- Season: slather every surface with a thin coat of mustard β it won't taste like mustard, it just grips the rub. Season heavily on all sides with Daily Blend first, then an equally heavy layer of Golden Hive, pressing it in. Rest it uncovered in the fridge overnight so the rub sets into a paste.
- Smoke: run the smoker at 250Β°F with the fat side up and the point toward the heat. Leave it alone β no peeking β until the bark is set and deep mahogany-black and the internal temp stalls around 165Β°F, usually 6 to 8 hours.
- Wrap: wrap tightly in butcher paper to power through the stall and keep the bark intact, then back on the smoker until the thickest part of the flat hits 203Β°F and a probe slides in like warm butter β 4 to 6 more hours. Temp is a guide; probe-tender is the answer.
- Rest: rest the wrapped brisket at least 1 hour (up to 4 in a dry cooler). Slice the flat against the grain in pencil-width slices, rotate the point 90 degrees, and slice again.

Chef's note: The stall is not a crisis. Somewhere around 160 to 170Β°F the temp will freeze for hours while moisture evaporates β every first-timer panics and cranks the heat. Don't. Wrap, wait, and trust the process. And the rest is not optional: slice too early and every drop of 12 hours' work ends up on the cutting board instead of in the meat.
