The sandwich that steakhouse leftovers dream of becoming. Thin-sliced steak seasoned with Daily Blend, a tangle of onions caramelized past the point of patience, and sharp cheddar melting into both β€” stacked on griddled sourdough with a horseradish mayo and dijon spread that cuts through all of it. Serves 2, and worth every one of the 50 minutes.

Ingredients

  • 1 lb ribeye or New York strip, sliced thin
  • 2 tsp SpiceX Daily Blend seasoning (SPG)
  • 4 thick slices sourdough bread
  • 2 tbsp butter, softened (for the bread)
  • 2 large yellow onions, sliced thin
  • 1 tbsp butter + 1 tbsp olive oil (for the onions)
  • 4 oz sharp cheddar, sliced or grated
  • 1/4 cup mayo (for the spread)
  • 1 tbsp prepared horseradish (for the spread)
  • 1 tbsp dijon mustard (for the spread)

Directions

  1. Onions: start these first β€” butter and oil in a wide pan over medium-low, onions in with a pinch of salt, and stir every few minutes for 25 to 30 minutes until deep amber and jammy. There is no shortcut; high heat makes fried onions, not caramelized ones.
  2. Spread: stir together the mayo, horseradish, and dijon. Fridge it β€” it wants to be cold against the hot filling.
  3. Steak: season the sliced steak with Daily Blend, then sear on a screaming-hot griddle in a single layer, 60 to 90 seconds per side, until browned but still juicy.
  4. Melt: mound the steak into two piles on the griddle, top each with the onions and cheddar, and tent with a lid (or a bowl) for a minute until the cheese collapses into the stack.
  5. Build: butter the sourdough on the outsides and griddle until golden and crisp. Spread the horseradish-dijon on the insides, slide a steak-onion-cheese pile onto each sandwich, press, and slice. Napkins are not optional.

Chef's note: Slice the steak thin and the bread thick β€” thin steak melts into the sandwich instead of dragging out of it in one bite, and thick sourdough stands up to the juices without going soggy. The cold horseradish-dijon against the hot cheese is the bite that sells it.
