Honey BBQ & Soy Beef Tenderloin Skewers

Cubes of beef tenderloin marinated in Golden Hive and soy, grilled hot, and lacquered with a sticky honey-soy glaze β€” finished with toasted sesame. Steakhouse flavor on a stick.

Tenderloin is the most tender cut on the animal, and it doesn't need much β€” just Golden Hive pulling honey-BBQ sweetness one way and soy pulling salty depth the other. The glaze reduces to a lacquer that clings to every cube, and the sesame finish makes them look like they came off a yakitori bar. About 30 minutes for 4 servings, plus marinating time if you have it.

Ingredients

  • 1.5 lb beef tenderloin, cut into 1.5-inch cubes
  • 2 tbsp SpiceX Golden Hive seasoning
  • 3 tbsp soy sauce (for the marinade)
  • 1 tbsp olive oil (for the marinade)
  • 3 tbsp honey (for the glaze)
  • 2 tbsp soy sauce (for the glaze)
  • 1 tsp SpiceX Golden Hive seasoning (for the glaze)
  • 1 tsp rice vinegar (for the glaze)
  • 1 tbsp butter (for the glaze)
  • Toasted sesame seeds (white and black), to finish
  • Bamboo or flat metal skewers

Directions

  1. Marinate: toss the tenderloin cubes with 3 tbsp soy sauce, the olive oil, and 2 tbsp Golden Hive until every side is coated. Rest 20 minutes at room temp β€” or up to 4 hours in the fridge. (If using bamboo skewers, soak them in water now.)
  2. Glaze: simmer the honey, 2 tbsp soy sauce, 1 tsp Golden Hive, and the rice vinegar in a small pan over medium heat for 2 to 3 minutes, until it thickens enough to coat a spoon. Swirl in the butter off the heat and set aside.
  3. Skewer: thread 3 to 4 cubes per skewer, leaving a little space between each so the heat can reach every face.
  4. Grill: over high heat, 2 minutes per side, turning to sear all four faces β€” about 8 minutes total for medium-rare on 1.5-inch cubes. Tenderloin is lean, so don't wander off.
  5. Lacquer: brush the skewers generously with the glaze in the last minute on the grill so it caramelizes, then again once plated. Shower with sesame seeds and serve hot.

Chef's note: Glaze late, never early β€” honey burns fast over high heat, so the sauce goes on in the final minute, not before. And cut the cubes even: a mixed batch of sizes means half your skewer is overdone before the other half sears.
