Ingredients
- 3 lbs chicken wings, split into drums and flats
- 2 tbsp baking powder (NOT baking soda — this is what crisps the skin)
- 3 heaping tbsp SpiceX Golden Hive seasoning (plus 1 tsp more for the glaze)
- 1/2 cup BBQ sauce (Sweet Baby Ray's or Stubb's)
- 3 tbsp honey (local is best)
- 2 tbsp unsalted butter, melted
- 1 tbsp apple cider vinegar
- Hot sauce, to taste (optional)
- Celery and carrot sticks, for serving
- Blue cheese or ranch dressing, for serving
Directions
- Dry the wings: pat every wing bone dry with paper towels. Wet skin equals rubbery skin — this is the single most important prep step everyone skips.
- Coat and rest: toss the wings with the baking powder and 3 heaping tablespoons of Golden Hive until fully coated. Rest uncovered on a wire rack in the fridge for at least 1 hour (overnight gives the deepest color).
- Grill indirect: set up a grill for indirect heat at 350°F. Lay the wings skin-side up and cook 35 to 40 minutes, flipping once at the 20-minute mark. Target 185°F internal — wing meat tastes better at 185° than at 165°.
- Make the glaze: whisk the BBQ sauce, honey, melted butter, vinegar, and 1 more tsp Golden Hive. When the wings hit 180°F, pull them and toss until every wing is coated.
- Lacquer: return the sauced wings to the grill for 5 to 7 minutes, moving them around, until the glaze is tacky and mahogany. Serve with celery, carrots, and blue cheese or ranch.
Chef's note: The baking powder trick is not optional. It raises the pH of the chicken skin, breaks down proteins faster, and creates micro-bubbles that crisp up like you fried them — but on the grill. Use only baking powder, never baking soda, or your wings will taste like soap.
