A seafood dish built around Oh' Cajun, ready in about 25 minutes for 4 servings. Expect mild-medium heat and a crema that turns that signature orange color all on its own.

Ingredients

  • 1.5 lbs skinless salmon, cut into 1.5-inch chunks
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil
  • Avocado oil spray
  • Salt and freshly cracked black pepper
  • 2 tbsp SpiceX Oh' Cajun seasoning (seasons the salmon AND builds the crema)
  • 1 1/2 tsp SpiceX Bella Blend seasoning (Italian herb depth)
  • 1/2 cup plain Greek yogurt, full-fat (for the crema)
  • 1/4 cup Kewpie mayo, or light mayo (for the crema)
  • 1 tbsp honey (for the crema)
  • 1 tbsp rice vinegar (for the crema)
  • 1/2 tsp kosher salt (for the crema)
  • 1 cup jasmine rice
  • 1 can (13.5 oz) full-fat coconut milk, plus 1/2 cup water
  • 3 scallions, thinly sliced
  • Fresh cilantro or parsley, chopped
  • 1 lime, cut into wedges

Directions

  1. Start the coconut rice: rinse rice until the water runs clear. Combine in a pot with the coconut milk, 1/2 cup water, and 1/2 tsp salt. Boil, cover, drop to the lowest heat, and cook 15 minutes — do not peek. Rest 10 minutes off the heat, covered.
  2. Season the salmon: cut into 1.5-inch chunks and pat dry. Toss with olive oil, salt, pepper, 2 tsp Oh' Cajun, and 1 tsp Bella Blend. Be generous — this is where the flavor lives.
  3. Bread it: mix the panko with another 1 tsp Oh' Cajun, 1/2 tsp Bella Blend, and a pinch of salt. Press each chunk into the panko. The oil from the seasoned salmon is the glue — no egg wash needed.
  4. Air fry: single layer, tops sprayed with avocado oil, 380°F for 12 to 13 minutes, flipping halfway. (No air fryer? Bake at 400°F for 13 to 15 minutes, same flip.)
  5. Make the crema: whisk the Greek yogurt, Kewpie mayo, honey, rice vinegar, 1/2 tsp salt, and 1 tbsp Oh' Cajun. Taste and add another pinch if you want more kick.
  6. Assemble: fluff the rice into bowls, pile on the salmon bites, and drown them in crema. Shower with scallions, cilantro, and a squeeze of lime.

Chef's note: Don't crowd the air fryer basket. Pile the bites on top of each other and you get steam, not crisp. Cook in two batches if you have to — the second batch only takes 12 minutes and the first can rest in a 200°F oven.
