Bella Blend Herbed Grilled Cheese
Three cheeses melting between well-buttered sourdough with a Bella Blend herb crust toasted right into the bread — the elevated grilled cheese that shatters when you bite it.

The move is Bella Blend whipped straight into softened butter and slathered edge to edge on good sourdough — the herbs toast into the crust and the whole kitchen smells like an Italian bakery. Inside: three cheeses pulling three jobs. Sharp cheddar for flavor, gruyère for nutty depth, and low-moisture mozzarella for the pull. And that's just our house trio — swap in any of your favorites; the method carries whatever cheese you love. Serves 2 in 20 minutes.
Ingredients
- 4 thick slices sourdough bread
- 4 tbsp butter, softened — don't be shy
- 2 tsp SpiceX Bella Blend seasoning, plus a pinch more for the crust
- 3 oz sharp cheddar, grated
- 3 oz gruyère, grated
- 3 oz low-moisture mozzarella, grated
- 1 tbsp grated parmesan (optional, for a frico edge)
Directions
- Herb butter: mash the softened butter with 2 tsp Bella Blend until fully blended and green-flecked throughout.
- Butter up: spread the herb butter generously on the OUTSIDE of every slice, corner to corner — bare edges become burnt edges. Dust the buttered sides with the extra pinch of Bella Blend.
- Stack: mix the three cheeses and pile evenly between the slices, buttered sides facing out. Press gently so the sandwich holds.
- Toast: low and slow in a heavy skillet over medium-low, 4 to 5 minutes per side with a lid on for the first side — the lid melts the middle while the crust builds. Sprinkle the parmesan in the pan before the flip for a lacy frico edge.
- Rest: one full minute on a rack before slicing — straight from the pan the cheese floods out, one minute later it pulls into ropes. Slice on the diagonal, obviously.
Chef's note: Medium-low is a discipline — herb butter carries real sugar from the garlic and it will scorch on medium-high before the cheese melts. If the crust is browning faster than the middle is melting, your pan is lying to you: drop the heat and add the lid.
